
Saffron Cultivation

- Ground meat (lamb or a mix of lamb and beef): 500 grams
- Grated onion: 1 large
- Cooked rice: 1/2 cup
- Saffron tea: 2 tablespoons
- Egg: 1
- Breadcrumbs: 2-3 tablespoons
- Salt and pepper: to taste
- Turmeric: 1 teaspoon
- Cinnamon powder: 1/2 teaspoon
- Oil for frying
Sauce Ingredients:
- Grated tomatoes: 2
- Chopped onion: 1
- Tomato paste: 1 tablespoon
- Saffron tea: 1 tablespoon
- Salt and pepper: to taste
- Oil for frying
Instructions:
- First, mix the ground meat with the grated onion, cooked rice, egg, saffron tea, breadcrumbs, salt, pepper, turmeric, and cinnamon. Knead the mixture until smooth and even.
- Take portions of the mixture and shape them into small balls (about the size of a walnut).
- In a large pan, heat some oil and fry the koftas until golden brown on all sides. Then, set them aside.
- In the same pan, sauté the chopped onion until golden. Add the tomato paste and grated tomatoes, and cook for a few minutes.
- Add the saffron tea, salt, and pepper, and cook for a few more minutes.
- Now, add the fried koftas into the sauce and let them cook in the sauce for about 30 minutes so the flavors meld together.
- Your saffron kofta is ready! Serve it with rice or bread.
